Method
- Whisk almond flour, psyllium husk, baking powder, and salt in a bowl. Add oil and hot water, then mix and knead briefly into a smooth ball.
- Divide dough into 8 equal balls. Cover and let rest 10 minutes.
- Roll each ball between two sheets of parchment paper into a 6-inch circle.
- Cook tortillas one at a time in a dry skillet over medium-high heat, 1 to 2 minutes per side, until bubbles and golden spots appear.
- Stack cooked tortillas on a plate, cover with a towel, and serve warm.
Notes
If the dough feels tacky, dust your hands with a little almond flour. Keep the tortillas covered with a towel after cooking or they’ll stiffen as they cool.
