Ingredients
  

  • 1 cup (125g) all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon fine sea salt
  • ½ cup (113g) unsalted butter, softened
  • ½ cup (135g) creamy no‑stir peanut butter
  • ½ cup (100g) packed light brown sugar
  • ¼ cup (50g) granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • ½ cup (120g) sourdough discard (100% hydration)
  • Flaky sea salt, for topping (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment. Whisk together flour, baking soda, and salt in a medium bowl.
  2. Cream butter, peanut butter, brown sugar, and granulated sugar in a large bowl until light and fluffy, about 2 minutes.
  3. Beat in egg, vanilla, and sourdough discard just until combined, about 30 seconds.
  4. Add flour mixture all at once, mixing on low until no dry streaks remain, about 20 seconds.
  5. Scoop tablespoon‑sized balls onto sheets, press with a fork in a crosshatch, and bake 10 to 12 minutes until edges are set and lightly golden. Cool on the sheet 5 minutes, then transfer to a wire rack. Sprinkle with flaky salt if desired.

Notes

The dough may look slightly curdled after adding the discard, which is normal. If the dough feels too sticky to scoop, chill it for 15 minutes. These cookies bake up soft and chewy; do not overbake.
