Soft & Chewy Quaker Oatmeal Cookies Recipe

Ingredients
  

  • 1 cup unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 3 cups Quaker old-fashioned oats
  • 1 cup raisins (optional)

Method
 

  1. Preheat oven to 350°F (175°C). In a medium bowl, whisk flour, baking soda, cinnamon, and salt.
  2. In a large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Add eggs and vanilla; beat until smooth.
  4. Gradually add dry ingredients, mixing just until combined. Fold in oats and raisins by hand.
  5. Drop rounded tablespoonfuls of dough onto ungreased baking sheets, 2 inches apart. Bake 8-10 minutes until edges are golden and centers look slightly underdone. Cool on sheets 2 minutes, then transfer to wire rack.

Notes

The cookies are delicate right out of the oven, so give them that 2-minute rest on the pan before transferring. This dough freezes perfectly shaped into balls; bake from frozen, adding a minute or two. To keep them soft, store with a slice of bread.
