- Preheat oven to 350°F (175°C). In a medium bowl, whisk flour, baking soda, cinnamon, and salt.
- In a large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
- Add eggs and vanilla; beat until smooth.
- Gradually add dry ingredients, mixing just until combined. Fold in oats and raisins by hand.
- Drop rounded tablespoonfuls of dough onto ungreased baking sheets, 2 inches apart. Bake 8-10 minutes until edges are golden and centers look slightly underdone. Cool on sheets 2 minutes, then transfer to wire rack.
Notes
The cookies are delicate right out of the oven, so give them that 2-minute rest on the pan before transferring. This dough freezes perfectly shaped into balls; bake from frozen, adding a minute or two. To keep them soft, store with a slice of bread.
