Ingredients
  

  • 1 cup (100g) old-fashioned rolled oats
  • 1 cup (125g) all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp salt
  • ½ cup (115g) unsalted butter, softened
  • ½ cup (100g) brown sugar, packed
  • ¼ cup (50g) granulated sugar
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1 cup (110g) finely grated carrot
  • ½ cup (60g) chopped walnuts (optional)
  • ¼ cup (40g) raisins (optional)
  • 4 oz (115g) cream cheese, softened
  • ½ cup (60g) powdered sugar
  • ½ tsp vanilla extract
  • 1 to 2 tbsp milk

Method
 

  1. Whisk together flour, baking powder, cinnamon, nutmeg, and salt in a bowl.
  2. Cream butter, brown sugar, and granulated sugar until fluffy, about 2 minutes.
  3. Beat in egg and vanilla until just combined.
  4. Fold in flour mixture, oats, grated carrot, walnuts, and raisins until no dry streaks remain.
  5. Scoop rounded tablespoons onto a parchment-lined sheet and bake at 350°F (175°C) for 10 to 12 minutes, until edges are golden.
  6. Beat cream cheese, powdered sugar, vanilla, and milk into a smooth drizzle, then drizzle over cooled cookies.

Notes

Let the cookies rest on the baking sheet for 5 minutes after they come out of the oven; they're soft and need that time to set. If you're doubling the batch, bake one sheet at a time, rotating halfway through.
