Ingredients
  

  • 4 oz full-fat cream cheese, softened
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 tsp finely grated lemon zest
  • ½ cup graham cracker crumbs, plus extra for rolling
  • 1 cup fresh blueberries

Method
 

  1. Beat butter, cream cheese, and sugar on medium speed until light and fluffy, about 2 to 3 minutes. Mix in egg and vanilla until smooth.
  2. Whisk flour, baking powder, salt, and lemon zest in a small bowl. Add to butter mixture on low speed until a few flour streaks remain, then stir in the ½ cup graham cracker crumbs until just combined.
  3. Gently fold in blueberries with a spatula. Cover and chill dough for at least 30 minutes.
  4. Preheat oven to 350°F (175°C). Scoop dough by rounded 1.5 tablespoons, roll each ball in extra graham cracker crumbs, and place 2 inches apart on parchment-lined baking sheets. Bake 12 to 14 minutes, until edges are lightly golden and tops look set but soft.
  5. Cool cookies on the sheet for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.

Notes

The 30-minute chilling time is not included in the prep or cook time. The cookies will feel soft and slightly puffed when you pull them from the oven but will firm up as they cool.
