Method
- Preheat the oven to 350°F (175°C). Line a 24-cup mini muffin tin with paper liners or grease each cup.
- Mash the bananas in a large bowl until smooth. Add the egg and oil, then whisk until combined.
- Sprinkle the flour, baking powder, and cinnamon (if using) over the wet mixture. Stir just until no dry streaks remain. If the batter is too thick, add milk 1 teaspoon at a time.
- Divide the batter among the mini muffin cups, filling each about three-quarters full. Bake for 12 to 15 minutes, until the tops spring back and a toothpick comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. Cut into halves or quarters for serving.
Notes
These mini muffins freeze exceptionally well, so make a double batch. The batter comes together in one bowl with no mixer required, and the longest wait is the bake itself.
