Method
- In a large bowl, whisk together the flour, yeast, sugar, and salt. Add the milk, 4 tbsp melted butter, and egg. Stir until a shaggy dough forms, then knead on a floured surface for 7 to 8 minutes until smooth and elastic.
- Place the dough in an oiled bowl, cover, and let rise in a warm spot until doubled, about 1 hour.
- Punch down the dough and divide into 12 equal pieces. Shape each into a smooth ball. Arrange in a buttered 9x13 inch pan.
- Cover the pan and let proof for 30 to 40 minutes until puffy and doubled. Preheat oven to 375°F (190°C).
- Brush the tops with half of the 1 tbsp melted butter. Bake for 18 to 22 minutes until deep golden brown. Remove from oven, brush with remaining butter, sprinkle with flaky salt. Cool 5 minutes in pan, then serve warm.
Notes
The rising times total about 1 hour 40 minutes, not counted in the prep and cook times above. For the softest rolls, store at room temperature in a sealed bag and reheat briefly before serving. If your kitchen is chilly, turn the oven on for 30 seconds, turn it off, and use it as a warm proofing box.
