Soft and Fluffy Dinner Rolls Recipe

Ingredients
  

  • 4 cups (520 g) bread flour
  • 2¼ tsp (1 packet) instant yeast
  • 3 tbsp granulated sugar
  • 1½ tsp fine sea salt
  • 1 cup (240 ml) whole milk, lukewarm
  • 4 tbsp unsalted butter, melted and cooled slightly
  • 1 large egg, at room temperature
  • 1 tbsp unsalted butter, melted, for brushing
  • Flaky sea salt, for sprinkling (optional)

Method
 

  1. In a large bowl, whisk together the flour, yeast, sugar, and salt. Add the milk, 4 tbsp melted butter, and egg. Stir until a shaggy dough forms, then knead on a floured surface for 7 to 8 minutes until smooth and elastic.
  2. Place the dough in an oiled bowl, cover, and let rise in a warm spot until doubled, about 1 hour.
  3. Punch down the dough and divide into 12 equal pieces. Shape each into a smooth ball. Arrange in a buttered 9x13 inch pan.
  4. Cover the pan and let proof for 30 to 40 minutes until puffy and doubled. Preheat oven to 375°F (190°C).
  5. Brush the tops with half of the 1 tbsp melted butter. Bake for 18 to 22 minutes until deep golden brown. Remove from oven, brush with remaining butter, sprinkle with flaky salt. Cool 5 minutes in pan, then serve warm.

Notes

The rising times total about 1 hour 40 minutes, not counted in the prep and cook times above. For the softest rolls, store at room temperature in a sealed bag and reheat briefly before serving. If your kitchen is chilly, turn the oven on for 30 seconds, turn it off, and use it as a warm proofing box.
