Soft and Chewy Vegan Oatmeal Cookies Recipe

Ingredients
  

  • 1 tbsp ground flaxseed
  • 3 tbsp water
  • 1/2 cup (100g) melted coconut oil
  • 3/4 cup (150g) packed brown sugar
  • 1 tsp vanilla extract
  • 1 cup (125g) all-purpose flour
  • 3/4 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 1/2 cups (150g) old-fashioned rolled oats
  • 1/2 cup (80g) raisins or dairy-free chocolate chips (optional)

Method
 

  1. Stir the flaxseed with the water in a small bowl and set aside to gel for 5 minutes. Meanwhile, preheat the oven to 350°F (175°C) and line a baking sheet with parchment.
  2. Whisk the melted coconut oil and brown sugar in a large bowl until smooth, then whisk in the flax egg and vanilla.
  3. Add the flour, baking soda, cinnamon, and salt to the wet mixture and stir until just combined. Fold in the oats and any optional raisins or chips.
  4. Drop rounded tablespoon-sized scoops of dough onto the baking sheet, spaced 2 inches apart. Bake for 10 to 12 minutes, rotating halfway, until edges are golden and centers are soft. Cool on the sheet for 5 minutes before moving to a rack.

Notes

Let the cookies rest on the hot pan after baking so the centers set without overbaking. If your oven runs hot, check them a minute early.
