Method
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment. In a large bowl, whisk the melted butter and 1 ½ cups sugar until smooth, then whisk in the egg and vanilla.
- Add the flour, cream of tartar, baking soda, and salt. Stir just until no streaks of flour remain.
- Scoop rounded tablespoons of dough. Roll into balls, coat in the extra sugar, and place 2 inches apart on the sheets.
- Bake for 11 to 13 minutes, rotating the pans halfway, until the edges are set and tops are crackled.
- Let the cookies cool on the sheets for 5 minutes, then move them to a wire rack to cool completely. Serve.
Notes
A 1 ½ tablespoon cookie scoop yields 24 cookies. For even baking, bake one sheet at a time on the middle rack if your oven runs hot.
