Ingredients
  

  • 1 cup (2 sticks) unsalted butter, melted and cooled slightly
  • 1 ½ cups granulated sugar, plus more for rolling
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 ½ cups all purpose flour
  • 1 teaspoon cream of tartar
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Method
 

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment. In a large bowl, whisk the melted butter and 1 ½ cups sugar until smooth, then whisk in the egg and vanilla.
  2. Add the flour, cream of tartar, baking soda, and salt. Stir just until no streaks of flour remain.
  3. Scoop rounded tablespoons of dough. Roll into balls, coat in the extra sugar, and place 2 inches apart on the sheets.
  4. Bake for 11 to 13 minutes, rotating the pans halfway, until the edges are set and tops are crackled.
  5. Let the cookies cool on the sheets for 5 minutes, then move them to a wire rack to cool completely. Serve.

Notes

A 1 ½ tablespoon cookie scoop yields 24 cookies. For even baking, bake one sheet at a time on the middle rack if your oven runs hot.
