Soft and Chewy Sourdough Christmas Cookies Recipe

Ingredients
  

  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup sourdough discard
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 4 ounces cream cheese, softened
  • 1 1/2 cups powdered sugar
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment. Beat butter and sugar with a mixer until pale and fluffy, 2 to 3 minutes.
  2. Mix in egg, vanilla, and sourdough discard on low until combined.
  3. Whisk flour, baking powder, salt, cinnamon, and nutmeg. Stir into wet mixture just until a soft dough forms. Wrap and chill at least 30 minutes.
  4. Roll chilled dough between parchment sheets to 1/4-inch thickness. Cut shapes and place on sheets.
  5. Bake 10 to 12 minutes, until edges are set. Cool on a rack completely.
  6. For frosting, beat cream cheese until smooth, then mix in powdered sugar, milk, and vanilla. Spread on cooled cookies and decorate.

Notes

Let the cookies cool completely before frosting or it will melt. The dough can be chilled up to 3 days; if it’s too firm to roll straight from the fridge, let it sit at room temperature for 5 minutes.
