Ingredients
  

  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 tsp cornstarch

Method
 

  1. Preheat oven to 350°F (175°C). Beat butter, peanut butter, and both sugars until light and fluffy, about 2 minutes.
  2. Mix in egg and vanilla until just combined.
  3. Whisk flour, baking soda, baking powder, salt, and cornstarch. Stir into wet mixture until no streaks remain.
  4. Scoop into 1 1/2-tablespoon balls, roll, and place on parchment-lined sheets. Press with a sugared fork in a crosshatch pattern. Bake 10 to 12 minutes until edges are golden and centers soft.
  5. Cool on the sheet for 5 minutes, then transfer to a rack. Serve warm or at room temperature.

Notes

If you’re using natural peanut butter, add 1 extra tablespoon of flour to prevent excessive spreading. Store baked cookies with a slice of bread to keep them soft.
