Ingredients
  

  • 1 ½ cups super fine blanched almond flour
  • ⅓ cup pumpkin puree
  • ¼ cup unsalted butter, melted and cooled
  • ⅓ cup granulated erythritol or allulose
  • 1 large egg, at room temperature
  • 1 tsp baking powder
  • 2 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • a pinch of salt

Method
 

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment. In a large bowl, whisk together the melted butter, pumpkin puree, sweetener, egg, and vanilla until smooth.
  2. In a separate bowl, whisk together the almond flour, baking powder, pumpkin pie spice, and salt.
  3. Stir the dry ingredients into the wet mixture with a spatula until no dry streaks remain. The dough will be soft and slightly sticky.
  4. Drop rounded tablespoons of dough onto the sheet, spacing them 2 inches apart. Lightly flatten each mound to about ½ inch thick. Bake for 12 to 15 minutes, until the edges are set and just golden.
  5. Let the cookies rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely before serving.

Notes

Cool the cookies fully before you store them, otherwise condensation will make them gummy. If you prefer a firmer cookie, leave them on the cooling rack uncovered for a few extra hours.
