Ingredients
  

  • 2 cups (200g) super fine blanched almond flour
  • 1/2 cup (110g) unsalted butter, softened
  • 1/3 cup (65g) granulated keto sweetener
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp fine sea salt
  • 1/2 cup (85g) sugar-free dark chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment. Beat the butter and sweetener with a hand mixer until fluffy, about 2 minutes.
  2. Add the egg and vanilla and beat until just combined, about 30 seconds, scraping the bowl once.
  3. Sprinkle in the almond flour, baking powder, and salt. Mix on low speed until a thick dough forms, about 1 minute.
  4. Fold in the chocolate chips with a spatula until evenly distributed.
  5. Scoop tablespoon-sized mounds onto the sheet, press a few extra chips on top, and bake 10 to 12 minutes until edges are golden. Cool on the sheet 5 minutes, then transfer to a rack and serve warm.

Notes

Chill the dough for 15 minutes if it feels too soft to scoop, especially on a warm day. The cookies firm up as they cool, so pull them from the oven while the centers still look a bit underdone.
