- Preheat oven to 350°F (175°C) and line a baking sheet with parchment. Beat the butter and sweetener with a hand mixer until fluffy, about 2 minutes.
- Add the egg and vanilla and beat until just combined, about 30 seconds, scraping the bowl once.
- Sprinkle in the almond flour, baking powder, and salt. Mix on low speed until a thick dough forms, about 1 minute.
- Fold in the chocolate chips with a spatula until evenly distributed.
- Scoop tablespoon-sized mounds onto the sheet, press a few extra chips on top, and bake 10 to 12 minutes until edges are golden. Cool on the sheet 5 minutes, then transfer to a rack and serve warm.
Notes
Chill the dough for 15 minutes if it feels too soft to scoop, especially on a warm day. The cookies firm up as they cool, so pull them from the oven while the centers still look a bit underdone.
