Ingredients
  

  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 1/2 cups gluten free 1:1 baking flour (a blend with xanthan gum)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups semisweet chocolate chips

Method
 

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy, about 2 minutes.
  3. Beat in the egg and vanilla until smooth, about 30 seconds.
  4. Add the flour, baking soda, and salt. Stir until just combined, then fold in the chocolate chips.
  5. Drop rounded tablespoonfuls of dough (about 2 tablespoons each) onto the sheets, 2 inches apart. Bake for 10 to 12 minutes, until edges are golden and centers look soft.
  6. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Notes

Gluten free flour blends vary. If yours doesn’t contain xanthan gum, add 1/2 teaspoon to the dry ingredients. For thicker cookies, chill the scooped dough for 30 minutes before baking.
