Method
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy, about 2 minutes.
- Beat in the egg and vanilla until smooth, about 30 seconds.
- Add the flour, baking soda, and salt. Stir until just combined, then fold in the chocolate chips.
- Drop rounded tablespoonfuls of dough (about 2 tablespoons each) onto the sheets, 2 inches apart. Bake for 10 to 12 minutes, until edges are golden and centers look soft.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Notes
Gluten free flour blends vary. If yours doesn’t contain xanthan gum, add 1/2 teaspoon to the dry ingredients. For thicker cookies, chill the scooped dough for 30 minutes before baking.
