- Preheat oven to 350°F (175°C) and line an 8x8-inch pan with parchment. In a medium bowl, whisk together the flour, baking soda, spices, and salt.
- In a large bowl, whisk the melted butter and brown sugar until smooth, then whisk in the molasses, egg, and vanilla until glossy.
- Stir the dry ingredients into the wet just until no flour streaks remain. Press the dough evenly into the pan and sprinkle the granulated sugar on top.
- Bake for 20 to 22 minutes, until edges are set and center looks slightly underdone. Cool completely in the pan, then lift out and slice into squares.
Notes
For the cleanest slices, let the bars cool fully before cutting. Their flavor deepens the next day, so they make a great make-ahead holiday treat.
