Ingredients
  

  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup small-curd cottage cheese, 4% or 2% milkfat
  • 1 3/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1 cup semisweet chocolate chips

Method
 

  1. Blend the cottage cheese in a small food processor until completely smooth, about 30 seconds.
  2. Cream the butter and both sugars with an electric mixer on medium speed until light and fluffy, about 3 minutes.
  3. Beat in the egg and vanilla, then mix in the smooth cottage cheese on low until combined.
  4. Whisk the flour, baking soda, and salt in a separate bowl. Gradually mix into the wet ingredients, then fold in the chocolate chips by hand.
  5. Preheat the oven to 350°F (175°C). Scoop dough by 2-tablespoon mounds onto parchment-lined baking sheets. Bake for 10 to 12 minutes, until edges are golden and centers look slightly underdone.
  6. Cool on the sheet for 5 minutes, then transfer to a wire rack.

Notes

Store the cookies in an airtight container while they’re still slightly warm if you want them extra soft the next day. The rest of the firming up happens as they sit, so don’t overbake.
