Ingredients
  

  • ½ cup unsalted butter, melted and cooled slightly
  • ¾ cup packed light brown sugar
  • ¼ cup granulated sugar
  • 1 large egg plus 1 large egg yolk
  • 1 ½ teaspoons vanilla extract
  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon fine sea salt
  • 1 ½ cups semi-sweet chocolate chunks

Method
 

  1. Melt the butter, then whisk in both sugars until combined. Let cool slightly.
  2. Beat in the egg, egg yolk, and vanilla until smooth and glossy.
  3. Fold in the flour, baking soda, salt, and chocolate chunks. Cover and chill the dough for at least 1 hour.
  4. Preheat oven to 350°F. Scoop dough onto lined sheets and bake 10 to 12 minutes until edges are golden and centers look underdone.
  5. Cool on the sheet for 5 minutes, then transfer to a wire rack. Serve warm.

Notes

Chilling the dough is key for thick, soft cookies. The 1-hour chill is not included in the prep time. For make-ahead, refrigerate the dough up to 24 hours. Bake times vary by oven, the centers should look slightly wet when you pull them out. Let the cookies rest on the hot sheet to finish setting.
