Soft and Chewy Brown Sugar Oatmeal Cookies Recipe

Ingredients
  

  • 1 ¾ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp fine sea salt
  • 1 cup unsalted butter, softened to room temperature
  • 1 cup packed light brown sugar
  • 1 large egg, room temperature
  • 1 ½ tsp vanilla extract
  • 3 cups old-fashioned rolled oats

Method
 

  1. Beat the butter and brown sugar with a hand mixer on medium speed for 2 minutes until pale and fluffy.
  2. Add the egg and vanilla and beat on low for 30 seconds until just combined, scraping the bowl once.
  3. Whisk the flour, baking soda, cinnamon, and salt in a separate bowl, then mix into the wet ingredients on low just until no dry flour remains.
  4. Fold in the oats with a spatula until evenly distributed.
  5. Scoop rounded tablespoonfuls onto a parchment-lined sheet 2 inches apart and bake at 350°F (175°C) for 10 to 12 minutes. Cool on the sheet for 5 minutes, then transfer to a wire rack.

Notes

Chilling the dough for 30 minutes before scooping gives you a slightly thicker cookie with a denser chew, but it is optional. These are at their best the day they are baked but stay soft in a sealed container for several days.
