Soba Noodle Soup Recipe

Ingredients
  

  • 6 oz dried soba noodles
  • 4 cups vegetable broth
  • 2 tbsp white miso paste
  • 1 tbsp soy sauce
  • 8 oz fresh shiitake mushrooms, stems removed, thinly sliced
  • 2 cups baby spinach
  • 2 green onions, thinly sliced
  • 2 tsp toasted sesame oil
  • 2 soft-boiled eggs (optional)

Method
 

  1. Cook the soba noodles according to package directions, about 4 to 5 minutes. Drain and rinse under cold water, then set aside.
  2. In a saucepan over medium heat, cook the sliced shiitakes with a pinch of salt until they release their liquid and begin to brown, about 3 minutes. Add the vegetable broth and soy sauce, bring to a simmer, and cook for 5 minutes. Remove from heat and whisk in the miso paste until dissolved.
  3. Divide the spinach and cooked noodles between two bowls. Ladle the hot broth over them, then top with halved soft-boiled eggs if using, the green onions, and a drizzle of toasted sesame oil. Serve immediately.

Notes

For the soft-boiled eggs, bring a small pot of water to a boil, gently lower in the eggs, and cook for 6½ minutes, then transfer them to an ice bath. Peel under running water. If you prefer a stronger, saltier broth, increase the miso to 3 tablespoons and the soy sauce to 1½ tablespoons.
