Method
- Heat oven to 350°F (175°C). Grease two 8-inch round cake pans and line bottoms with parchment. Whisk flour, baking powder, and salt together.
- Beat 1 cup butter and sugar until fluffy. Add eggs one at a time, then 2 tsp vanilla. Mix flour mixture and buttermilk into butter mixture in alternating additions, starting and ending with flour, until just smooth.
- Divide batter between pans, smooth tops, and bake 25 to 30 minutes until a toothpick comes out clean. Cool in pans 10 minutes, then turn out onto a rack to cool completely.
- For the frosting, beat 1 1/2 cups butter until smooth. Gradually add powdered sugar, then 2 tsp vanilla and 2 tbsp milk. Add more milk a drop at a time until spreadable but still holds peaks.
- Place one layer on a plate, top with frosting, add second layer. Spread a thin crumb coat over the whole cake and chill 30 minutes.
- Cover cake with a thick, smooth layer of the remaining white frosting. Tint a portion of frosting black and another red.
- With a toothpick, sketch Snoopy’s face on the top of the cake. Fill piping bags with the colored frostings and pipe the outline, ears, eyes, nose, smile, and red collar. Serve.
Notes
This is a rich cake, so thin slices go a long way. For the smoothest canvas, let the crumb coat chill until firm before applying the final white layer. The design holds up best if the cake stays cool until shortly before serving.
