Ingredients

  • 1/2 cup rolled oats
  • 1 tbsp chia seeds
  • 1 tbsp unsweetened cocoa powder
  • 2 tbsp creamy peanut butter
  • 1 to 2 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • pinch of sea salt
  • 3/4 cup milk of choice
  • 2 tbsp chopped dark chocolate or chocolate chips
  • 2 tbsp crushed roasted peanuts
  • 2 large Medjool dates, pitted
  • 3 tbsp warm water
  • 1/4 tsp vanilla extract

Method

  1. Stir together oats, chia seeds, cocoa powder, peanut butter, maple syrup, vanilla, salt, and milk until smooth.
  2. Blend dates, warm water, and vanilla in a small blender until a smooth, pourable caramel sauce forms.
  3. Layer half the oat base, half the caramel, and 1 tbsp each of the chocolate and peanuts in a jar. Repeat with remaining oat base and caramel, top with a few more chocolate pieces, cover, and refrigerate at least 6 hours or overnight.
  4. In the morning, top with the remaining crushed peanuts and extra chocolate chips, and eat cold.

Notes

The oats need at least 6 hours to soften and thicken, so plan to make them the night before. If your dates are hard, soak them in warm water for 5 minutes before blending.
