Smothered Chicken with Creamy Gravy Recipe

Ingredients
  

  • 4 boneless, skin-on chicken thighs (about 1.5 lb)
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 2 tbsp vegetable oil
  • 1 medium onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1 cup low-sodium chicken broth
  • ½ cup heavy cream
  • 1 tsp Worcestershire sauce
  • ½ tsp dried thyme (or a few fresh sprigs)
  • Optional: chopped parsley for serving

Method
 

  1. Pat chicken dry, season both sides with salt and pepper. Heat oil in a large skillet over medium-high, sear skin-side down until golden and skin releases, 3-4 minutes. Flip and cook 2-3 minutes, then set aside.
  2. Lower heat to medium, cook onion until softened, about 4 minutes. Add garlic and thyme, cook 30 seconds. Stir in flour, cook 1 minute.
  3. Whisk in broth, scraping up browned bits. Return chicken and juices to skillet, cover, simmer over low heat until chicken reaches 165°F, 10-12 minutes.
  4. Move chicken to a plate, stir cream and Worcestershire into gravy, simmer 1-2 minutes. Spoon over chicken and serve with parsley.

Notes

The simmer time in step 3 will change if you use bone-in thighs or breasts (see the table above for adjusted times). Let the chicken rest at room temp while you prep the onion to help it cook evenly.
