- Pat chicken dry, season both sides with salt and pepper. Heat oil in a large skillet over medium-high, sear skin-side down until golden and skin releases, 3-4 minutes. Flip and cook 2-3 minutes, then set aside.
- Lower heat to medium, cook onion until softened, about 4 minutes. Add garlic and thyme, cook 30 seconds. Stir in flour, cook 1 minute.
- Whisk in broth, scraping up browned bits. Return chicken and juices to skillet, cover, simmer over low heat until chicken reaches 165°F, 10-12 minutes.
- Move chicken to a plate, stir cream and Worcestershire into gravy, simmer 1-2 minutes. Spoon over chicken and serve with parsley.
Notes
The simmer time in step 3 will change if you use bone-in thighs or breasts (see the table above for adjusted times). Let the chicken rest at room temp while you prep the onion to help it cook evenly.
