Ingredients
  

  • 4 boneless, skinless chicken breasts (about 6 oz each), pounded ½-inch thick
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter, divided
  • 8 oz cremini mushrooms, sliced
  • 1 medium yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1 cup low-sodium chicken broth
  • ½ cup heavy cream
  • 1 tbsp fresh thyme leaves

Method
 

  1. Pound chicken to an even ½-inch thickness and season both sides with salt, pepper, and garlic powder.
  2. Heat oil and 1 tbsp butter in a large skillet over medium-high heat. Sear chicken 3 to 4 minutes per side until golden, then transfer to a plate.
  3. Reduce heat to medium, add remaining 1 tbsp butter, and sauté mushrooms and onion with a pinch of salt for 5 to 7 minutes until softened and golden.
  4. Stir in garlic for 45 seconds, sprinkle in flour, and cook 1 minute. Pour in broth, scrape up browned bits, and simmer 2 to 3 minutes until thickened.
  5. Return chicken to the pan, spoon sauce over, cover, and simmer over medium-low for 8 to 10 minutes until chicken reaches 165°F (74°C).
  6. Stir in cream and thyme, heat through for 1 minute, then plate and spoon the sauce over the chicken.

Notes

Let the cream sit out while you cook so it is not straight from the fridge, which keeps the sauce smooth. If your chicken breasts are thicker than ½ inch, just add an extra 2 to 3 minutes to the simmer time and check the temperature earlier.
