Method
- Season chicken with salt and pepper. Heat oil in a large deep skillet over medium-high heat. Sear chicken skin-side down until deep golden, 6–8 minutes per side. Remove to a plate.
- Reduce heat to medium. Add sliced onion to skillet and cook, stirring occasionally, until soft and browned, about 8–10 minutes. Add garlic; cook 1 minute. Sprinkle flour over onions and stir to coat.
- Gradually whisk in chicken broth, then milk, paprika, thyme, and a pinch of salt and pepper. Bring to a simmer and cook until thickened, 3–4 minutes.
- Return chicken to skillet, skin side up, into the gravy. Reduce heat to low, cover, and simmer until chicken is cooked through (165°F), 25–30 minutes.
- Serve chicken and gravy over cooked rice. Spoon extra gravy on top.
Notes
Bone-in thighs stay juicy; if using boneless, simmer for 15–20 minutes. The gravy will thicken as it cools, so add a splash of broth or milk when reheating.
