- Whisk together the flour, graham cracker crumbs, baking soda, and salt in a medium bowl.
- Beat the butter, brown sugar, and granulated sugar until fluffy, about 2 minutes. Add the egg and vanilla and beat until smooth.
- Stir the dry mixture into the butter mixture just until combined.
- Gently fold in the chocolate chips and mini marshmallows.
- Scoop 1 1/2-tablespoon portions, roll into balls, and place 2 inches apart on parchment-lined sheets. Chill for 20 minutes, then preheat the oven to 350°F (180°C).
- Bake one sheet at a time for 10 to 12 minutes, until edges are golden and centers look soft. Cool on the sheet for 5 minutes, then transfer to a wire rack.
Notes
Chilling the dough is optional but helps the cookies keep a thick, chewy shape and prevents the marshmallows from spreading too much. If you skip chilling, expect slightly flatter cookies with crispy caramelized marshmallow edges.
