Smoky Three Bean Chili Recipe

Ingredients
  

  • 2 tbsp olive oil
  • 1 large yellow onion, diced
  • 1 large red bell pepper, diced
  • 4 cloves garlic, minced
  • 3 tbsp chili powder
  • 1 tbsp ground cumin
  • 2 tsp smoked paprika
  • ½ tsp cayenne pepper (optional)
  • 1 (15 oz) can cannellini beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (28 oz) can crushed fire-roasted tomatoes
  • 1 ½ cups vegetable broth
  • 1 tsp kosher salt
  • 1 tbsp apple cider vinegar

Method
 

  1. Heat the oil in a large pot over medium heat. Add the onion and bell pepper and cook until softened, about 6 to 7 minutes, then stir in the garlic and cook 30 seconds.
  2. Sprinkle in the chili powder, cumin, smoked paprika, and cayenne. Stir constantly and cook for 45 seconds to 1 minute until fragrant.
  3. Add the drained beans, crushed tomatoes, vegetable broth, and salt. Bring to a boil, then reduce the heat to low, partly cover, and simmer for 20 to 25 minutes, stirring a couple times.
  4. Remove from heat and stir in the apple cider vinegar. Ladle into bowls and top with onion, cilantro, or sour cream.

Notes

The chili tastes even better after a night in the fridge, so it is a great make-ahead meal. If you like a thicker chili, simmer it uncovered for the last 10 minutes. For extra brightness, squeeze fresh lime over each bowl just before eating.
