- Heat oven to 400°F (200°C). In a small bowl, whisk together the smoked paprika, brown sugar, garlic powder, onion powder, salt, black pepper, and cayenne.
- Pat the wings dry, toss with the olive oil, then coat evenly with the seasoning blend.
- Arrange the wings on a wire rack set over a foil-lined baking sheet. Bake 45 minutes, flipping once halfway, until the skin is deep amber and the internal temperature reaches 175°F (80°C).
- Pile the wings onto a plate and serve hot, with fresh parsley if you like.
Notes
Dry the wings really well and use that wire rack; it makes all the difference between crispy and just okay. The seasoning blend can be made ahead and stored in an airtight jar for up to 6 months. Do not crowd the baking sheet, or the wings will steam instead of crisp.
