Smoky-Sweet Chicken Wing Seasoning Recipe

Ingredients
  

  • 2 lbs chicken wings
  • 1 tbsp olive oil
  • 2 tbsp smoked paprika
  • 1 tbsp brown sugar
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 ½ tsp kosher salt
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper

Method
 

  1. Heat oven to 400°F (200°C). In a small bowl, whisk together the smoked paprika, brown sugar, garlic powder, onion powder, salt, black pepper, and cayenne.
  2. Pat the wings dry, toss with the olive oil, then coat evenly with the seasoning blend.
  3. Arrange the wings on a wire rack set over a foil-lined baking sheet. Bake 45 minutes, flipping once halfway, until the skin is deep amber and the internal temperature reaches 175°F (80°C).
  4. Pile the wings onto a plate and serve hot, with fresh parsley if you like.

Notes

Dry the wings really well and use that wire rack; it makes all the difference between crispy and just okay. The seasoning blend can be made ahead and stored in an airtight jar for up to 6 months. Do not crowd the baking sheet, or the wings will steam instead of crisp.
