Smoky Kielbasa Potato Soup Recipe

Ingredients
  

  • 2 tbsp olive oil
  • 1 lb smoked kielbasa, sliced into half-moons
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 ½ lbs Yukon gold potatoes, peeled and diced into ½-inch cubes
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish

Method
 

  1. Heat olive oil in a large pot over medium-high heat. Add kielbasa and cook until browned, about 4 to 5 minutes. Remove sausage and set aside.
  2. Reduce heat to medium. Add onion and cook until translucent, about 3 minutes. Stir in garlic and smoked paprika, cook for 30 seconds.
  3. Add potatoes, chicken broth, salt, and pepper. Bring to a boil, then reduce to a simmer, cover, and cook until potatoes are tender, 15 to 18 minutes.
  4. Return kielbasa to the pot and stir in heavy cream. Heat gently for 2 minutes, then adjust seasoning.
  5. Ladle into bowls, garnish with parsley, and serve hot.

Notes

The soup thickens as it sits because the potatoes release starch. When reheating leftovers, just add a little broth to loosen it to the consistency you like.
