Smoky Crockpot Cabbage and Sausage Recipe

Ingredients
  

  • 1 lb smoked sausage (like kielbasa or andouille), sliced into ½-inch rounds
  • 1 small head green cabbage (about 2 lbs), cored and cut into 2-inch wedges
  • 1 medium yellow onion, thinly sliced
  • 3 garlic cloves, smashed
  • 1 cup low-sodium chicken broth
  • 2 tbsp unsalted butter, cut into small pieces
  • 1 tsp caraway seeds (optional)
  • ½ tsp kosher salt
  • ¼ tsp black pepper

Method
 

  1. Brown the sausage in a skillet over medium-high heat for about 4 minutes, then transfer to the slow cooker, keeping the drippings.
  2. In the same skillet, sauté the onion over medium heat for 3 to 4 minutes until soft, then add the garlic and cook 30 seconds more. Scrape everything into the slow cooker.
  3. Layer the cabbage wedges over the sausage, top with the onion mixture, dot with butter, sprinkle with caraway, salt, and pepper, then pour the broth down the side.
  4. Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the cabbage is fork-tender.
  5. Gently toss to break the cabbage into pieces, then serve hot in bowls with the broth.

Notes

If you are using a lean turkey sausage, drizzle a little oil into the skillet before browning. The cabbage will release some liquid as it cooks, so don't add more broth than the recipe calls for.
