- In a small bowl, stir together the smoked paprika, cayenne, garlic powder, onion powder, thyme, oregano, salt, and pepper until well blended.
- Whisk in the olive oil, white vinegar, and Worcestershire sauce to form a smooth, dark paste.
- Place the chicken in a dish, pour the marinade over, and turn to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
- Heat a skillet over medium-high heat with a little oil. Sear the chicken for 5-6 minutes per side, until browned and cooked through (165°F).
- Rest the chicken for 5 minutes, then slice across the grain and serve warm.
Notes
Marinate the chicken for at least 30 minutes, but 2 to 4 hours gives you a deeper flavor. If you use bone-in cuts, adjust cook time accordingly and check for doneness with a thermometer. The resting step is key for juicy chicken.
