Ingredients
  

  • 2 lbs boneless skinless chicken breasts
  • 1 tbsp smoked paprika
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 cup olive oil
  • 2 tbsp white vinegar
  • 1 tbsp Worcestershire sauce

Method
 

  1. In a small bowl, stir together the smoked paprika, cayenne, garlic powder, onion powder, thyme, oregano, salt, and pepper until well blended.
  2. Whisk in the olive oil, white vinegar, and Worcestershire sauce to form a smooth, dark paste.
  3. Place the chicken in a dish, pour the marinade over, and turn to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  4. Heat a skillet over medium-high heat with a little oil. Sear the chicken for 5-6 minutes per side, until browned and cooked through (165°F).
  5. Rest the chicken for 5 minutes, then slice across the grain and serve warm.

Notes

Marinate the chicken for at least 30 minutes, but 2 to 4 hours gives you a deeper flavor. If you use bone-in cuts, adjust cook time accordingly and check for doneness with a thermometer. The resting step is key for juicy chicken.
