Smoky Beef Jerky Marinade Recipe

Ingredients
  

  • 2 lbs beef eye of round or sirloin tip
  • ½ cup soy sauce
  • ¼ cup Worcestershire sauce
  • 2 tbsp brown sugar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp freshly ground black pepper
  • 1 tsp liquid smoke
  • ½ tsp smoked paprika
  • ½ tsp cayenne pepper

Method
 

  1. Partially freeze the beef, then slice against the grain into ¼-inch strips.
  2. Whisk the soy sauce, Worcestershire, liquid smoke, brown sugar, garlic powder, onion powder, black pepper, smoked paprika, and cayenne in a large bowl until the sugar dissolves.
  3. Toss the beef strips in the marinade, cover, and refrigerate 12 to 24 hours.
  4. Drain the strips without rinsing, then dry in a dehydrator at 160°F or an oven at the lowest setting (around 170°F) with the door slightly open for 4 to 6 hours, until the jerky bends without snapping.
  5. Cool completely on racks before serving or storing.

Notes

Pat the jerky dry with a paper towel after cooling if you see any oily spots. For a softer chew, stop the drying a little earlier; a slight tackiness in the center is fine, since it firms as it rests.
