Smoky Beef Burrito Bowl Recipe

Ingredients
  

  • 1 lb flank steak
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp garlic powder
  • ½ tsp salt
  • 2 tbsp neutral oil, divided
  • 1 cup quick-cooking rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • Lime wedges
  • ½ cup sour cream
  • 2 tbsp adobo sauce
  • 1 tbsp fresh lime juice

Method
 

  1. Bring 1 cup water and a pinch of salt to a boil, stir in the rice, cover, and remove from heat. Let sit 5 minutes, then fluff.
  2. Slice steak against the grain, toss with paprika, cumin, garlic powder, salt, and 1 tbsp oil. Sear in a hot skillet with remaining oil for 2-3 minutes per side until done.
  3. In the same skillet, sauté bell pepper and corn over medium-high heat for about 4 minutes, stirring occasionally, until charred in spots.
  4. Whisk sour cream, adobo sauce, lime juice, and salt for the crema. Divide rice, beans, beef, and veggies into bowls, top with avocado, and drizzle with crema. Serve with lime wedges.

Notes

If using leftover cooked rice, skip step 1 and simply warm it before serving. Let the seared beef sit for a moment off the heat so the juices redistribute.
