Smoked Turkey Wings Recipe

Ingredients
  

  • 4 whole turkey wings (about 3 lbs total)
  • 2 tbsp olive oil
  • 3 tbsp packed dark brown sugar
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • ½ tsp cayenne pepper

Method
 

  1. Pat turkey wings dry. Mix all dry rub ingredients. Coat wings with olive oil, then massage on the rub. Let rest at room temp 30 minutes.
  2. Preheat smoker to 275°F with indirect heat and wood chunks.
  3. Place wings on grate, skin side up. Smoke 2 to 2.5 hours, until internal temp reaches 175-180°F and skin is deep mahogany.
  4. Rest wings loosely tented with foil for 10 minutes, then carve or serve whole, piled on a platter.

Notes

The 30-minute rest at room temperature is important for bark formation and is not counted in the prep time. If your smoker runs hot, check the wings after 1.5 hours.
