Ingredients

  • 1 tablespoon olive oil
  • 2 smoked turkey legs or wings (about 2 pounds)
  • 1 large onion, diced
  • 3 carrots, peeled and diced
  • 3 celery ribs, diced
  • 4 cloves garlic, minced
  • 8 cups water
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 cup wild rice, rinsed
  • Salt and black pepper to taste
  • Chopped fresh parsley, for garnish

Method

  1. Heat olive oil over medium-high heat. Add turkey legs and sear 3-4 minutes per side until browned.
  2. Pour in the water, then add onion, carrots, celery, garlic, bay leaves, and thyme. Bring to a boil, reduce heat to low, cover, and simmer 1 hour 30 minutes until turkey is tender.
  3. Remove turkey to a cutting board. Stir rice into the broth, return to a simmer, cover, and cook 45 minutes until rice is tender. Shred the turkey meat, discarding bones and skin, then stir it back into the pot.
  4. Season with salt and pepper. Ladle into bowls, top with parsley, and serve hot.

Notes

Use smoked turkey legs with the bone and skin, not deli slices, to get that deep, homemade broth. The soup thickens as it rests because the wild rice absorbs liquid, so plan for a slightly brothier consistency right after cooking.
