Ingredients

  • 12 oz smoked turkey sausage, sliced ½-inch thick
  • 3 bell peppers (any color), sliced
  • 1 medium yellow onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • ¼ tsp kosher salt
  • ¼ tsp black pepper
  • ¼ cup low-sodium chicken broth
  • Fresh parsley, chopped, for serving

Method

  1. Heat olive oil in a large skillet over medium-high heat. Add the sausage slices in a single layer and cook, turning once, until browned and crisp at the edges, about 5 minutes.
  2. Reduce heat to medium. Add the onion and cook until softened, about 3 minutes, then stir in the garlic and cook 30 seconds more.
  3. Add the bell peppers, oregano, salt, and black pepper. Cook, stirring occasionally, until the peppers are tender but still have a little bite, 5 to 7 minutes.
  4. Pour in the chicken broth, scrape up any browned bits, and let it simmer for 1 minute. Serve over rice and top with parsley.

Notes

The skillet mixture is naturally gluten-free and dairy-free on its own. Serve over rice or with bread for a heartier meal, or keep it low-carb by eating it straight from the pan.
