- Remove backbone with shears, press to flatten, pat dry, and rub all over with salt. Refrigerate uncovered on a rack for 8-24 hours.
- Let turkey sit at room temperature 1 hour, pat skin dry, and brush with melted butter mixed with pepper and garlic powder. Preheat Traeger to 325°F.
- Place turkey on grill skin side up, insert probe into thickest breast, and smoke at 325°F until breast hits 160°F and thighs 170°F, about 2.5-3 hours.
- Rest loosely tented 20 minutes, then carve and serve hot.
Notes
Rest the bird a full 20 minutes before carving so the juices don’t spill onto the board. If your turkey is larger than 14 lb, increase the cook time by about 15 minutes per pound, but always rely on probe temperature over the clock.
