Smoked Turkey Breast Recipe

Ingredients
  

  • 3 to 4 lb boneless, skin-on turkey breast
  • 2 tbsp olive oil
  • 2 tbsp kosher salt
  • 1 tsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp smoked paprika
  • 1 tbsp brown sugar

Method
 

  1. Pat turkey dry and rub with kosher salt. Refrigerate uncovered on a wire rack for at least 1 hour.
  2. Mix garlic powder, onion powder, paprika, brown sugar, and pepper. Coat the breast with olive oil, then apply the spice rub evenly.
  3. Smoke skin-side up at 225°F until internal temp reaches 150°F, then increase grill to 300°F and cook until 160°F.
  4. Rest the breast for 15 minutes, then slice against the grain and serve.

Notes

If your turkey breast has a brine solution added, cut the salt in the dry brine to 1 tbsp. Let the breast sit out for 30 minutes before smoking so it cooks more evenly. A probe alarm set to 150°F makes the cook totally hands-off.
