Smoked Salmon Salad Recipe

Ingredients
  

  • 4 oz cold-smoked salmon
  • 4 cups mixed salad greens
  • 1/2 English cucumber, sliced into thin half-moons
  • 1/4 small red onion, very thinly sliced
  • 1 ripe but firm avocado, halved, pitted, and sliced
  • 2 tbsp capers, drained
  • 2 tbsp chopped fresh dill, plus extra for garnish
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • Kosher salt and black pepper, to taste

Method
 

  1. Whisk olive oil, lemon juice, Dijon mustard, salt, and pepper in a small bowl until smooth, about 30 seconds.
  2. Toss the mixed greens with half the dressing in a large bowl, about 20 seconds, until lightly coated.
  3. Flake the salmon into large pieces and arrange over the greens, then fan the avocado, cucumber, and red onion on top.
  4. Scatter capers and dill over the salad, drizzle with the remaining dressing, and serve immediately.

Notes

If your avocado is very soft, slice it just before serving to prevent browning. The salad is best eaten right after dressing, so only assemble what you plan to finish.
