Smoked Salmon Quiche Recipe

Ingredients
  

  • 1 unbaked 9-inch pie crust
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon ground nutmeg
  • 1 small shallot, finely minced
  • 4 oz smoked salmon
  • 2 tablespoons capers
  • 2 tablespoons chopped fresh dill
  • 1/2 cup shredded Gruyère cheese (optional)

Method
 

  1. Preheat oven to 375°F (190°C). Line crust with parchment, fill with pie weights, and bake 15 minutes. Remove weights and parchment, then bake 5 minutes more until lightly golden.
  2. Whisk eggs, cream, milk, salt, pepper, and nutmeg. Stir in shallot, smoked salmon, capers, and dill.
  3. Pour custard into crust. Top with Gruyère if using. Bake 35 to 40 minutes until center jiggles slightly and a knife near the edge comes out clean.
  4. Let cool 10 minutes, then slice into wedges and serve warm or at room temperature.

Notes

The blind-baked crust can be made a day ahead and kept covered at room temperature. Tenting the crust edges with foil during the last 10 minutes of baking prevents them from over-browning while the center finishes setting.
