Ingredients
  

  • 2 cups cooked and cooled sushi rice
  • 4 oz smoked salmon
  • 1 avocado, sliced
  • 1/2 English cucumber, thinly sliced
  • 1/2 cup shelled edamame, thawed
  • 1 carrot, julienned or shredded
  • 1 sheet nori, cut into thin strips
  • 1 tbsp toasted sesame seeds
  • 3 tbsp mayonnaise
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 2 tsp honey
  • 1 tsp toasted sesame oil
  • 1 tsp grated fresh ginger
  • pinch sriracha

Method
 

  1. In a small bowl, whisk together the mayonnaise, soy sauce, rice vinegar, honey, sesame oil, ginger, and sriracha until smooth.
  2. Divide the rice between two bowls. Arrange the smoked salmon, avocado, cucumber, edamame, carrot, and nori over the rice.
  3. Drizzle the dressing over each bowl, sprinkle with sesame seeds, and serve immediately.

Notes

For the best texture, use rice that is cold or at room temperature, not hot. Hot rice will warm the smoked salmon and wilt the cucumber, so you lose the crisp, cool contrast.
