Smoked Mozzarella Pasta Salad Recipe

Ingredients
  

  • 8 oz short pasta (fusilli, rotini, or penne)
  • 8 oz smoked mozzarella, cubed
  • 1 cup cherry tomatoes, halved
  • 1/4 cup thinly sliced fresh basil
  • 1/4 cup finely diced red onion
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp kosher salt, plus more for pasta water
  • 1/4 tsp freshly ground black pepper
  • 1 small garlic clove, grated or finely minced

Method
 

  1. Cook the pasta in a large pot of generously salted boiling water until al dente, about 8 to 10 minutes. Drain and rinse under cold water until cool.
  2. Whisk together the olive oil, lemon juice, Dijon, garlic, salt, and pepper in a small bowl.
  3. In a large bowl, combine the cooled pasta, smoked mozzarella, tomatoes, basil, and red onion. Pour the dressing over and gently fold until everything is evenly coated.
  4. Cover and refrigerate for at least 30 minutes. Toss again before serving, spoon into a bowl, and scatter extra basil on top.

Notes

Let the salad rest for at least 30 minutes in the fridge so the pasta can soak up the dressing. If you make it a day ahead, you might need to loosen it with a small splash of olive oil and lemon juice before you serve it.
