Smoked Corned Beef Recipe

Ingredients
  

  • 3-4 lb corned beef brisket, flat cut
  • 2 tbsp black peppercorns
  • 2 tbsp coriander seeds
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp smoked paprika
  • 1 tsp mustard powder
  • 1 tsp brown sugar

Method
 

  1. Rinse the corned beef and soak it in cold water in the refrigerator for 8-24 hours, changing the water 2-3 times. Pat completely dry.
  2. Coarsely grind the peppercorns and coriander seeds, then stir in the garlic powder, onion powder, smoked paprika, mustard powder, and brown sugar.
  3. Press the dry beef into the rub on all sides and let it sit at room temperature for 30 minutes while you preheat the smoker to 225°F.
  4. Smoke the beef at 225°F until an internal probe reads 195-205°F, about 6-8 hours, wrapping partway through if the bark gets too dark or the temperature stalls.
  5. Wrap the beef in foil and a towel, rest it in a cooler for 30-60 minutes, then slice thin against the grain and serve warm.

Notes

The 8-24 hour soak time is not included in the active prep or cook times above. Soaking is essential for reducing the salt, so plan ahead. If you are using a point cut, expect a slightly longer cook time.
