Method
- Preheat smoker to 225°F (107°C). On a baking sheet, toss Brussels sprouts with olive oil, salt, and pepper until evenly coated.
- Arrange sprouts cut-side down on smoker-safe mat or grates. Smoke for 45 to 60 minutes until tender and lightly charred.
- Meanwhile, combine maple syrup, balsamic vinegar, and Dijon mustard in a small saucepan. Simmer over medium heat for 3 to 4 minutes until slightly thickened, then whisk in butter off the heat.
- Transfer hot sprouts to a bowl, drizzle with warm glaze, and toss to coat. Sprinkle with flaky salt and serve immediately.
