- Boil salted water, trim sprouts, and cook 8 minutes until tender. Drain and pat very dry.
- Preheat oven to 425°F. Oil a baking sheet. Toss sprouts with olive oil, salt, pepper, and garlic powder, then smash each to ½ inch thick on the sheet.
- Roast 12 minutes, flip, and continue roasting 10 to 15 minutes more until deeply browned and crispy.
- Transfer to a bowl, toss with Parmesan and a squeeze of lemon, and serve immediately.
Notes
Serve right out of the oven for the crispiest texture. If you have extra loose leaves on the pan, they’ll crisp up faster, pull them off early if they start to burn. A hot oven and dry sprouts are the keys to success.
