- In a small bowl, combine mayonnaise, ketchup, mustard, and pickle juice. Season with salt and pepper and set aside.
- Divide beef into 4 equal balls and season generously with salt and pepper.
- Heat a large skillet over medium-high. Place one tortilla in the pan, top with a beef ball, and smash flat with a spatula. Cook 2 minutes.
- Flip the tortilla so the meat side is down, top with a slice of cheese, and cook 1-2 minutes until cheese melts and beef is browned. Transfer to a plate and repeat with remaining tortillas.
- Top each taco with burger sauce, pickles, and any desired extras. Fold and serve immediately.
Notes
If you want a head start, mix the sauce and portion the beef a few hours ahead and keep them in the fridge. Leftover sauce keeps for a week. These tacos are at their crispiest right out of the skillet, so assemble and eat them right away.
