- In a small bowl, stir together the mayonnaise, ketchup, chopped pickles, and pickle juice until smooth.
- Heat a large skillet over medium-high heat and add ½ tablespoon butter. Form the beef into 4 balls, then smash each one flat in the hot pan. Season with salt and pepper, cook 2 minutes per side, and transfer to a plate.
- Reduce heat to medium and add another ½ tablespoon butter. Place a tortilla in the pan, add a cheese slice and a patty to one half, then top with sauce, lettuce, and pickles if using. Fold and cook about 2 minutes per side until golden and crisp. Repeat.
- Rest each quesadilla on a cutting board for 30 seconds, slice into wedges, and serve hot with extra sauce.
Notes
A pizza cutter makes quick, clean wedges. If your tortillas are stiff, warm them in the dry skillet for 10 seconds before filling so they fold without cracking. Let the quesadilla rest for half a minute before slicing or the cheese will run out.
