Ingredients
  

  • 6 tbsp unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg yolk
  • 1/2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/4 tsp baking soda
  • 1/4 tsp fine sea salt
  • 2 tbsp granulated sugar for rolling

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment. Beat butter and 1/2 cup sugar until pale and fluffy, about 2 minutes.
  2. Beat in egg yolk and vanilla. Stir in flour, baking soda, and salt until a soft dough forms.
  3. Scoop 1 tbsp dough, roll into balls, coat in the extra sugar, and place 2 inches apart on the prepared sheet.
  4. Bake 8-10 minutes until edges are golden. Cool on the sheet 5 minutes, then transfer to a wire rack.

Notes

For slightly thicker, chewier cookies, chill the shaped dough balls on the baking sheet for 10 minutes before baking. A #40 cookie scoop (about 1.5 tbsp) gives perfectly portioned dough balls.
