- Preheat oven to 350°F (175°C) and line a baking sheet with parchment. Cream butter, brown sugar, and granulated sugar until light and fluffy, about 2 minutes.
- Beat in egg yolk and vanilla just until combined, about 30 seconds.
- Mix flour, baking soda, and salt, then stir into the wet ingredients. Fold in oats and chocolate chips until no streaks remain.
- Drop 6 heaping 1.5-tablespoon mounds of dough onto the sheet, spaced 2 inches apart. Bake 10 to 12 minutes until edges are golden. Cool on sheet 5 minutes, then transfer to a wire rack.
Notes
If the dough feels too soft to scoop, pop it in the fridge for 10 minutes. A quick chill helps the cookies hold their shape without changing the bake time.
