Ingredients

  • 2 cups (250g) all-purpose flour, plus more for dusting
  • 2 tablespoons granulated sugar
  • 1 packet (2 1/4 teaspoons) instant yeast
  • 1/2 teaspoon fine sea salt
  • 1/2 cup whole milk, warm (110°F)
  • 2 tablespoons unsalted butter, melted, plus extra for pan
  • 1 large egg, at room temperature
  • 3 tablespoons unsalted butter, very soft
  • 1/3 cup packed light brown sugar
  • 1 tablespoon ground cinnamon
  • 1/2 cup powdered sugar
  • 1 to 2 tablespoons milk or cream
  • 1/2 teaspoon vanilla extract

Method

  1. In a large bowl, whisk together 2 cups flour, 2 tablespoons sugar, the yeast, and salt. Pour in warm milk, melted butter, and egg. Stir until a shaggy dough forms, then knead on a floured surface about 5 minutes until smooth and elastic.
  2. Roll the dough into a 12x8-inch rectangle. Spread the 3 tablespoons softened butter over it, leaving a 1/2-inch border along one long edge. Sprinkle brown sugar and cinnamon evenly, then press gently.
  3. Roll the dough up tightly from the long edge, pinch the seam, and cut into 6 equal rolls. Butter an 8-inch pan, arrange rolls cut side up, cover loosely, and let rise until puffy and nearly doubled, 45 to 60 minutes.
  4. Preheat oven to 350°F. Bake rolls 22 to 25 minutes until golden and centers reach 190°F. Cool in the pan 5 minutes.
  5. Whisk 1/2 cup powdered sugar, 1 tablespoon milk, and vanilla. Add more milk as needed for a thick, pourable glaze. Drizzle over warm rolls and serve.

Notes

The total time does not include the 1 hour of rise time. For cream cheese frosting instead of glaze, beat 2 ounces softened cream cheese, 2 tablespoons butter, 1/2 cup powdered sugar, and 1/4 teaspoon vanilla until smooth.
