Ingredients
Method
- Pat steaks dry, season with 1 tsp salt and the pepper. Sear in hot oil for 3 minutes per side, then set aside.
- In the same skillet, cook sliced onion until softened, about 5 minutes, then add garlic for 30 seconds.
- Layer halved potatoes in the slow cooker, sprinkle with remaining 1/2 tsp salt. Top with steaks, onion mixture, broth, Worcestershire, tomato paste, and thyme.
- Cover and cook on low for 6 hours until beef is fork-tender and potatoes are done.
- Remove steak and potatoes with a slotted spoon. Whisk cornstarch slurry into the liquid, cook on high 10 minutes until thickened. Pour gravy over the dish and serve.
Notes
If you’re short on time, you can cook on high for 4 hours instead. The potatoes may be softer on high, so check for doneness a little earlier. This dish also works well with carrots added in step 3.
